[Fall Food] Easy Peasy Quiche Recipe – Using Leftovers!

Courtesy of Hurricane Sandy, my little nugget’s daycare was cancelled today.  We got a lot done together – some fabulous fall DIY – but more on that later.  Towards the end of the evening, whipping winds & threatening clouds looming, Trip and I had a toddler goo-goo-ga-ga conversation and decided not to venture out for groceries.  Inspired by Candie’s home-baked gluten-free chocolate chip pumpkin cookies, we shopped in our fridge… and freezer for something to warm up the oven with.   And here’s the delicious result:

Easy Quiche Made With Love & Leftovers

Recipe for basic quiche:

  • Frozen Pre-Made Pie Crust
  • 4 Eggs
  • 3/4 cup Half & Half
  • 8oz Cheese
  • 1/8 tsp Nutmeg
  • Salt & Pepper

Leftovers I chopped up & added:

  • Honey ham deli sandwich meat
  • Random cheeses from the fridge – mozzarella, cheddar and american – yeah, I went there
  • Sauteed spinach

Other possibilities if you prefer:

  • Cherry tomatoes or normal tomatoes, chopped
  • Gruyere cheese
  • Onion, Peppers
  • Sausage

Instructions:

  • Preheat oven to 375 F
  • Saute your veggies in some olive oil
  • Mix eggs, Half & Half, nutmeg and some salt in a bowl
  • Add veggies and cheeses to egg mixture, stir
  • Pour all of it into the pie crust
  • Bake for 35-40 minutes (mine took 40) until nothing sticks to a toothpick you stick in the center
  • Enjoy the delicious home-baked aroma
  • Let cool for 10 minutes
  • Sprinkle salt & pepper on top

Hubby was ecstatic that such a delicious dinner was waiting for him when he walked through the door… and an extra bonus: this is a two dish meal (mixing bowl and frying pan) so there was barely any cleanup!  Yum.  Win win win.  Perfect for a fall day when you just don’t want to venture out for supplies.  What are you cooking up for easy dinners these days?
